Best-Ever Rustic Chocolate S’mores

with Gluten-Free Vegan Graham Crackers

First, let's make the graham crackers:


Gluten-Free Vegan Graham Crackers 

 


Vegan graham crackers are surprisingly difficult to find on a regular shopping trip, often making vegan s’mores a chore.  But these are gluten-free, too — and completely delicious, lacking none of that perfect graham goodness! Crunchy as can be, with a touch of oat and cinnamon, you won’t want to go back to store-bought after baking these!


Yields roughly 45 graham crackers.


2 cups all purpose gluten-free flour

1 cup oat flour

½ cup granulated sugar or coconut sugar

1 tsp cinnamon

2 tsp baking powder

1 tsp baking soda

1 tsp salt

⅔ cup melted coconut oil or butter

5 tbsp water

3 tbsp maple syrup

2 tbsp molasses

1 tsp vanilla extract



Instructions:


Introduce all dry ingredients to a medium-sized mixing bowl and set aside. 


Combine melted coconut oil or butter, water, maple syrup, and molasses in a small bowl and add to dry ingredients. Mix until a ball forms. 


Transfer dough onto a parchment-lined counter top.  Flatten the dough with your hands slightly and top with another piece of parchment paper. 

 


Using a rolling pin, roll dough longways until it’s about ⅙ in thick. Using a chef's knife or pizza cutter, trim uneven sides and cut into 2 ½ in x 3 in rectangles (or whatever size you prefer, really!). When choosing a size, keep in mind that these graham crackers will rise a bit from the leavening agents (baking powder, baking soda). 


Using a fork, poke the graham crackers down the middle three times to create the classic graham cracker look.


Gently transfer to a parchment-lined baking sheet and leave about a half inch of space between crackers. If the graham crackers become misshapen, use the side of your chef’s knife or a spatula to straighten them out. 


Re-roll your scrap dough into more rectangles until you’ve used it all.


Bake at 325 degrees F for 20-22 minutes or until lightly golden on the edges. Transfer to a cooling rack and cool completely before enjoying or assembling into Best-Ever Rustic Chocolate S’mores!
