Welcome to Mindo Chocolate
Mindo chocolate is crafted from harvest to bar from single origin heirloom Ecuadorian cacao.
We buy organic cacao beans right out of the cocoa pod from farmers who are members of an organic fair trade cooperative in Ecuador. The cacao is then fermented, carefully sun dried and roasted by us. The nibs are shipped to Dexter, Michigan, where we craft the chocolate in small batches using only cocoa beans, cocoa butter (that we press from the same beans) and organic evaporated cane juice. The chocolate is conched for 36-48 hours in a stone grinder to develop optimal flavor and characteristics of the lot it was harvested from. Each batch will have its own unique (and delicious) flavor. If you are not 100% satisfied with our chocolate, please let us know. We are continually striving to create the best tasting chocolate possible. We know that you need to feel good about the food that you eat (and we do too) so we also strive to improve the living conditions for cacao farmers and people who live in Mindo. We also work at creating a product that has as small carbon footprint as possible.
